Vanilla Spice Plantain Power Cakes


Its been ages since I baked with plaintains, so I snatched up a massive one at the market this past weekend. I am trying to figure out how I am going to fuel myself the day of our big walk and I am thinking these might be a good bet, along with some Quest bars and fresh fruits and veggies. 

We were told they supply snacks and lunch, but I have no faith they'll come through with anything that meets my nutrition needs and standards (I'm guessing juice and bagels or other high carb, low nutrition crap).  But maybe I'll be pleasantly surprised.

In any case, these turned out so well, I don't think I need to save them for any special occasion or event.  These taste so much like they are made with grain flour, its amazing.  I couldn't even detect the plantain taste.

Vanilla Spice Plantain Power Cakes

1 large plaintain, somewhat ripe (i.e. not green)
1/2 cup egg whites
1 scoop vanilla protein powder (I used Vega)
1/4 cup granulated stevia (optional)
1 tsp vanilla extract
1/4 tsp ground cinnamon
1/4 tsp sea salt
1/4 tsp baking soda

Puree all ingredients in food processor or blender.  Pour into 2 mini loaf pans lined with parchment, or muffin tins with parchment linings.  Bake at 350F for 40 minutes for loaves, or 25-30 minutes for muffins.

Japanese 7-Spice Kelp Noodles

I love trying new spices and seasonings, so I am very excited that the President's Choice Black Label line now has a bunch of new spice blends available.  My most recent find: Shichimi Togarashi, or Japanese 7-Spice blend. It's a combination of crushed red chili flakes, sea salt, Szechiuan peppercorns, black and white sesame seeds, poppy seeds, orange zest, wasabi powder and nori seaweed flakes. I make Japanese-inspired dishes all the time, but resort to the same old flavours most of the time: miso, soy, sesame, ginger and garlic.  I was so excited to be able to liven things up a bit. This dish is easy and tasty, although be warned that this seasoning packs punch.  I used 1 tsp, which ended up being too spicy for me, and I have a high tolerance for heat!  I recommend 1/4-1/2 tsp, or, if you don't like heat at all, make your own at home and omit the red chili flakes.  You'll get all the flavour without the heat. Summer is over! Well, at least if you're a student. Officially it doesn't end for a few weeks, and it certainly still feels like summer. Yeah, I hate it. Okay, I know you're going to be interested in this post!
