Apple of My Eye

I had to take a break from my school work today to devote a whole post to the topic of apples. I LOVE apples, they are by far my favorite snack. Baby carrots come second. I am not a "snack food" eater as I believe most of it is garbage and is not even very tasty. I am a firm believer that you need nothing more than fruits and veggies to snack on, assuming you are eating hearty, well balanced meals. Anyways, back to apples.

As a kid I only knew of 4 kinds of apples: Mcintosh, Red delicious, Yellow delicious and Granny Smiths, none of which I particularly like. But as an adult, the whole world of apples opened up to me. And wow, what a world it is!

Honey Crisp apples are definitely the "it" apple du jour. I agree, they are fantabulous, but they are not my favorite. I also like Jona Golds and Fujis, but my absolute favorite, by far, are Mutsus. They are also called Crispins sometimes. They are large, pale green apples that have the perfect balance of tartness and sweetness. When young and green, they are quite crisp, but as they get older, they turn yellower and get sweeter and softer. You can bake with them, but I wouldn't waste a good Mutsu in a baked good, to me, they are best eaten on their own. I truly believe this is an underappreciated fruit so I urge you to try one if you see them. Whenever I find them, my heart beats faster and I quickly fill a bag with a bunch of them. In fact, I have a whole drawer in the fridge devoted to them. This irks Adam to no end, who feels I am unfairly hogging refridgerator space. I'm not sure, but I think perhaps he is a wee bit jealous of the passion that a Mutsu apple elicits from me...

Japanese 7-Spice Kelp Noodles

I love trying new spices and seasonings, so I am very excited that the President's Choice Black Label line now has a bunch of new spice blends available.  My most recent find: Shichimi Togarashi, or Japanese 7-Spice blend. It's a combination of crushed red chili flakes, sea salt, Szechiuan peppercorns, black and white sesame seeds, poppy seeds, orange zest, wasabi powder and nori seaweed flakes. I make Japanese-inspired dishes all the time, but resort to the same old flavours most of the time: miso, soy, sesame, ginger and garlic.  I was so excited to be able to liven things up a bit. This dish is easy and tasty, although be warned that this seasoning packs punch.  I used 1 tsp, which ended up being too spicy for me, and I have a high tolerance for heat!  I recommend 1/4-1/2 tsp, or, if you don't like heat at all, make your own at home and omit the red chili flakes.  You'll get all the flavour without the heat. Okay, I know you're going to be interested in this post! I am sure virtually every woman in North America has wondered how Hollywood celebrities achieve such 'perfect' bodies.  Well, at CAN FIT PRO last week, one of Hollywood's top fitness trainers, Eric the Trainer , was there to tell us fitness professionals the secrets!
