These are a perfect guilt-free snack or yummy addition to breakfast.
3 ripe bananas, mashed
1/4 cup canola oil
1/2 cup non-fat yogurt
1/4 cup skim milk
4 egg whites
1 tsp vanilla extract
2 cups organic whole wheat flour
1/2 cup stevia (the powdered kind that measures 1-to-1 with sugar)
2 tbls chia seeds
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
Whisk together wet ingredients in large bowl. Measure out dry ingredients into a smaller bowl and stir. Add dry ingredients to wet and stir, just until combined. Fill mini muffin tins and bake at 350F for 15 minutes or until toothpick comes out clean. Makes about 34 mini muffins.
Optional add-ins: walnuts, raisins, blueberries, 1/2 cup mini dark chocolate chips
